index all on-chain contracts to measure growth of those scaffold-built

Scaffold adds metadata to the contract's metadata section, saying which version of scaffold was used to build this contract.

We need to index all deployed contracts on testnet and mainnet and measure the fraction & total number of which have this setting, as a way to quantify Scaffold's adoption.

BTW this should (in theory) be easy to do, if only thing that we want is to measure % of all contracts. I think we should be able to simply listen to deploy events and update the counter (or just store contract hashes in new table for each deploy) then just join 2 tables to measure %
We probably want a separate pipeline for that though, cause I imagine it's a nightmare trying to redeploy registry pipeline in mainnet (or trying to index registry in mainnet) and you have to scan from whatever ledger first Soroban contract was deployed...
