Blast API shutting down after Oct 31

Hey, just a heads-up — [Blast API](https://blastapi.io/) is going offline after Oct 31, 2025. The [reference here](https://github.com/subquery/network-contracts/blob/develop/src/networks.ts#L66) may stop working.
A quick fix would be using [Chainstack](https://chainstack.com) as an RPC provider.
