Regenerates the _v2 OpenIFS coupling files against the updated 220509-node CORE3 (devJigFinal) mesh on albedo. mesh_file points at the albedo pool (/albedo/pool/fesom2/core3); mesh.nc is generated from the ASCII .out files by pyfesom2 if absent. Mirrors configs/TCO95_CORE3.yaml (levante paths).
