fix: disable profiling endpoint by default

Summary

• Sets profiling: false in charts/registry/values.yaml default values
• The pprof profiling endpoint was inadvertently enabled on the status server in all environments with no production override

Identified as a widespread pattern across openkcm repos — same fix being applied to extauthz and platform-extension-service.

Test plan

• No functional change to the main application — status server profiling endpoint only
