The crate is named for what it delivers — the profile's QUIC crypto layer — rather than for the implementation it currently binds. rust/quinn moves to rust/quic; the crate, workspace alias, imports, fixture paths, and doc references follow. No code change beyond the name.

Mechanical rename:
rust/quinn→rust/quic, cratepolymorph-tls-quinn→polymorph-tls-quic, plus the workspace alias, imports,include_bytes!fixture paths, and doc references. The crate is named for what it delivers — the profile's QUIC crypto layer — rather than for the implementation it binds; the successor PR moves that binding from quinn-proto to noq-proto, and this rename keeps that change from being a rename too.No code change beyond the name.
