docs: document --host, and stop saying configs get skipped - #36

Every nested-compositor example omitted --host, which defaults to wayland, so an AwesomeWM reader on Xorg following the quick start hit an error the guide never mentioned. The migration page still said an X11 pattern makes SomeWM skip the config, which stopped being true when the pre-scan became warn-only.
