fix(fab): restore SwiftUI floating action button

Summary

• restore the SwiftUI-backed Liquid Glass FAB from the 3.1.1 release state
• add back the exact @expo/ui dependency needed by the SwiftUI entrypoint
• keep the flat MenuView fallback for non-Liquid Glass environments
• cover the Liquid Glass player-count selection path in the FAB test
